A living fossil
With its long, streamlined body, a distinctive elongated snout, diamond-shaped scales and with a lifespan that can reach up to 100 years this ancient fish is truly a marvel of evolution.
From the smallest sturgeons at around 0,75 meters in length to the largest sturgeon species the Beluga sturgeon, which can reach lengths of up to 6 meters and weigh over a ton. Sturgeons reach maturity at different ages depending on the species.

The sturgeon, which forms part of 27 Acipenseriformes species, is the official king of the Caspian Sea.
About 250-millions-years ago, when dinosaurs reigned supreme over the earth. The prehistoric sturgeon was born, nestled in the heart of the nutrient filled waters of the Caspian sea, and there it remains to this day.

Caviar Harvesting and Processing.
Our caviar is carefully harvested and processed by hand to ensure the highest quality and freshness.
Once we have gently extracted the roe from the sturgeon, the roe is rubbed over a mesh screen to separate out the membrane of the sack from the eggs themselves. Then, they are rinsed off and must be inspected individually. Then, it can all be weighed out to exact specifications, salted, and packaged for consumption.
